The Fermentation ProjectJames Hoffmann

One Guatemalan coffee, four fermentations — a limited tasting kit you cup along with the world.

The kit

The 2026 Tasting Kit

One clean Guatemalan lot, split four ways in the fermentation tank — everything else held constant. Taste exactly what controlled fermentation does, and doesn't do, to the cup.

The Fermentation Project 2026 tasting kit — four 100 g coffee bags

What's inside

  • 014 × 100 g whole-bean coffees — one per process, roasted identically
  • 02The same Guatemalan coffee in every bag — fermentation is the only variable
One lot, four paths

The four coffees

Each bag holds the same lot — the only difference is what happened in the fermentation tank.

Control

Mechanically Demucilaged

The baseline — mucilage stripped by machine before microbes can get to work.

Wild Fermentation — one of the four coffees in the tasting kit
Fermented

Wild Fermentation

Naturally occurring microbes run the tank — the traditional route.

Lactobacillus-Inoculated — one of the four coffees in the tasting kit
Fermented

Lactobacillus-Inoculated

Seeded with lactic acid bacteria — rounder, creamier, dairy-adjacent characters.

Saccharomyces-Inoculated — one of the four coffees in the tasting kit
Fermented

Saccharomyces-Inoculated

A selected yeast strain dominates — clarity, consistency, lifted fruit.

Cup along

Cup along, live

Brew all four coffees at home and taste them in real time with James Hoffmann. The four protocols were designed with fermentation specialist Lucia Solis. Can't make it live? The session stays on YouTube afterwards.

Before you order

The tasting kit ships on its own — it can't be combined with other products in one order. Order your other coffees separately.

Delivery across Indonesia, or free pickup at the roastery in Malang.

Please note: due to logistics, we can't promise your kit will arrive in time for the live tasting on 3 October. As of writing, we're glad to say shipments are on track to make it — and we're working as hard as we can to keep it that way — but it isn't a guarantee. The session stays on YouTube afterwards, so you can cup along any time.
